
When we think of therapy we often think of medications, but food can be therapeutic too. On this week's Food Fix, Nikki Heyder shows us how to make a delicious, low fat cheesecake that's high in calcium to help prevent osteoporosis. Why not make this delicious treat work hard for your health?
Ingredients
• 1 1/2 cups almond meal
• 1/2 cup crushed calcium-fortified muesli
• 1 tablespoon canola oil
• 110g reduced-fat cream cheese
• 2 cups light ricotta
• ½ cup non-fat plain yoghurt
• 1/3 cup corn starch
• 2 large eggs
• 3 large egg whites (yolks discarded)
• 2 teaspoons freshly grated lemon zest
• 2 tablespoons lemon juice
• ¼ teaspoon salt
• Berries (frozen and thawed or fresh) to decorate
Method
1. Preheat oven to 180°
2. Combine the almond meal, muesli and canola oil and press flat into greased cake tin (or individual ramekins for single serves)
3. Mix cream cheese, ricotta and yoghurt in a bowl
4. Add corn starch and the 2 whole eggs
5. Beat egg whites in a separate bowl until they form soft peaks
6. Fold egg whites carefully through the cheesecake mix
7. Add lemon zest, juice and salt to mixture and stir well, then pour mixture into tin on top of crust
8. Bake in oven for 45-55 minutes
9. Leave to cool for 10 minutes, top with fresh berries and serve
